Gradient overlay
• 4 boneless chicken breasts
• 1.5 cups Quaker Oats, grind to a powder
• 1 tsp. ground cumin
• 1 tsp. garlic powder
• 2 tsps. chili powder
• 2 egg whites, lightly beaten
• 1 Tbsp. water
• 1 Tbsp. oil
• 1 tsp. salt
For Sunshine Salsa:
• 1 cup prepared salsa
• 1/4 cup orange segments, coarsely chopped
 

 

Cooking Instructions

• Combine the salsa and orange pieces in a bowl and refrigerate.
• Heat oven to about 375’F.
• Line a baking tray with aluminium foil and spread oil on it. 
• Mix salt, cumin, garlic powder, chili powder, and oats in a bowl.
• Dip the chicken fillet in the egg mixture first and then in the oat mixture until it is well coated.
• Place the chicken on a foil sheet (spread 1 Tbsp. oil) on a baking tray and bake for about 30 minutes or until golden brown.
• Serve the chicken with the chilled salsa
