For the marinade
• ½ tsp. Ground coriander 
• ½ tsp. Ground cumin
• 2 Garlic cloves, finely chopped
• 1 tsp. Lemon juice 
• 1 Tbsp. olive oil
• Salt and black pepper to taste
For the fish
• ½ Cup Quaker Oats
• ½ kg fish fillets, wash, pat dry
• ½ Cup flour
• 2 Eggs (beaten)
• Oil spray
For garnish:
• Lemon slices
• Fresh tomatoes
• Chopped green salad
 

 

Cooking Instructions

• Preheat the oven to 180 degrees.
• Combine the marinade ingredients in a bowl.
• Marinate the fish, cover and leave in the fridge for one hour.
• Remove the fish from marinade and dip into the flour, eggs, and oats, coating lightly.
• Spray the pan with oil and arrange the fish on a pan and bake for 15 minutes.
• To Serve: Garnish with sliced lemon and tomato.
